Butter Biscuits ( Cooky Nury )


These are very simple piped biscuits, the hard part is getting the same amount of mixture into each blob on the baking tray. If you manage that, and watch them so they don't burn, then the rest is very easy. If you don't have a piping bag then spoon the mixture onto the baking sheet with a teaspoon, it doesn't matter if they are uneven, as they cook, they will spread out to be thinner and more even.

225 gms Cake Flour
2.6 gms Baking Powder
20 gms Milk Powder
215 gms Butter
150 gms Icing Sugar
1 Egg

1. Sift the flour, baking powder and milk powder into a bowl and set aside.
2. Into a mixer, put the butter and blend till soft, add the icing sugar and spin on medium power until it's mixed thoroughly through the butter, this make take a few minutes to achieve. Once it's mixed it will be a consistent white colour.
3. Add the egg and mix on low power until it's an even mix.
4. Next add the flour, a little at a time mixing it in slowly each time.
5. Spoon the mixture into a piping bag and pipe it out into small blobs about 3cm x 2cms (just longer than an inch x just shorter than an inch) onto a greased baking sheet. It's better if you have a silicone non-stick baking sheet for this. They will spread and thin out as they cook, you don't need too much mixture on each biscuits. The important part here it to get them all the same amount of mixture and roughly even in shape.
6. Preheat the oven to 180 degrees Celsius and bake in the middle of the oven for 10-15 minutes until the edges are golden brown.
